Ingredients

For the Vegan Mayo

  • 1/2 cup unsweetened soy milk
  • 1 cup neutral oil, such as vegetable oil, canola oil, or sunflower oil

  • 1 tablespoon lime juice or white vinegar
  • 1 teaspoon mustard
  • 1/2 teaspoon salt

Method

  1. Add the Base Ingredients: Place the soy milk, lime juice or vinegar, mustard, salt, sugar, garlic, black pepper, and Caribbean Health Foods Soy Lecithin into a blender cup or regular blender.
  2. Blend First: Blend for about 10 to 15 seconds so the Soy Lecithin begins mixing properly into the liquid.
  3. Add the Oil Slowly: While blending, slowly drizzle in the oil. Do not pour it all in at once. The mixture should begin to thicken as the oil blends into the soy milk.
  4. Blend Until Creamy: Continue blending until the mayo becomes thick, smooth, and creamy.
